Ingredients:
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
1 tablespoon ginger, minced
1 tablespoon curry powder
1 teaspoon ground cumin
1 teaspoon ground turmeric
1/2 teaspoon ground coriander
1/2 teaspoon ground paprika
1 tin (400g) chopped tomatoes
1 tin (400g) chickpeas, drained and rinsed
500g mixed vegetables (e.g., carrots, bell peppers, courgettes, cauliflower)
1 tin (400ml) coconut milk
Salt and pepper, to taste
Fresh coriander, for garnish
Instructions:
Heat olive oil in a large frying pan or saucepan over medium heat. Add the chopped onion and cook until softened about 5 minutes.
Add the minced garlic and ginger, cooking for another 1-2 minutes.
Stir in the curry powder, ground cumin, ground turmeric, ground coriander, and ground paprika. Cook for another 1-2 minutes, allowing the spices to release their aroma.
